Alpha Foods, a plant food manufacturer, and The Every Company, an animal-free egg protein maker, have collaborated to improve the flavor & texture of non-animal products. The partnership has the potential to set new standards for plant-based innovation. The Every Company has developed animal-free functional eggs employing precision fermentation technology with the same binding and gelation properties as real eggs.
Plant-based meat formulators are attempting to enhance the flavor and texture of their products. Still, the industry faces a significant challenge in replacing methylcellulose as an analogous meat binder. The company’s solution has the potential to revolutionize the alternative meat industry by bringing next-generation gelation and binding capabilities to plant-based meats, enabling foods to closely resemble their natural analogues. This collaboration might replace some synthetic or highly processed ingredients, such as cellulose and psyllium husk, and help certain Alpha Foods’ products have an improved texture and a cleaner label.
